White Chicken Gravy is a perfect dish for those who want to try less spicy Indian gravy. Its gravy is thick, smooth and creamy, rich and delicious in taste. The colour of the gravy looks white due to the coconut paste, cashew paste and yoghurt. Fresh cream also adds colour to it and gives it a nice taste. In this recipe, we will avoid using powdered spices like red chilli powder or turmeric powder to maintain its white colour. We get the aroma of the white chicken gravy from the use of whole spices like cardamom, cinnamon, cumin, mace/ nutmeg, javitri. 

Firstly, we need to marinate the chicken for at least an hour so that the meat  becomes tender and absorbs the paste and spices well which will in turn enhance the taste of the recipe. The ingredients required to prepare this chicken are as follows: 

Ingredients:

  • 500 gm bone-in chicken pieces
  • 2 tbsp ginger-garlic paste
  • 1 tsp black pepper powder
  • 1 tsp salt
  • 2 tbsp curd
  • 10-12 cashew nuts
  • 2 tsp lemon juice
  • 2 green chillies
  • 1 inch cinnamon stick
  • 2 cardamoms
  • 3-4 cloves
  • nutmeg(small piece)
  • 6-8 whole black pepper 
  • 1/2 tsp cumin seeds 
  • 2 tbsp fresh cream
  • 2 tbsp oil
  • 2 tbsp butter
  • javitri/mace (small piece)

Instructions:

Making of the pastes:

Make a paste of onion and green chilli together in a mixer grinder. Add a little water if needed. Make a smooth paste. For another paste, you need some cashew nuts (10-12 pieces). Take a blender jar. Add a little water to the cashew nuts and make a smooth fine paste. Keep it aside. For coconut paste, take a coconut and extract the flesh or meat of the coconut. Next, take a blender jar and add in the coconut meat. Add a little water and blend the coconut. Then, you need a strainer to run the smooth coconut paste through it. 

How to marinate the chicken:

Cut bone-in chicken pieces and wash them well. Then drain the water and put the chicken in a large bowl. Marinate the chicken with ginger-garlic paste, salt, lemon juice, black pepper powder and keep it for an hour. Then, add 2 tbsp refined oil in a frying pan, let the oil heat, now add the chicken pieces one by one and fry them. After frying the chicken, keep them aside. 

Preparation of the gravy:

Add 2 tbsp refined oil in another frying pan. Add 1 bay leaf, 2 cardamoms, 3-4 cloves, a small piece of javitri and a small piece of nutmeg, 6-8 whole black pepper and cumin seeds. Add onion-green chilli paste, cashew nut paste and coconut paste. Add a little water if the consistency of the gravy is too thick. Next, whisk 2 tbsp of yoghurt in a small bowl and add the beaten curd to the frying pan on a low flame or turn off the gas before adding the curd. Now, add the fried chicken pieces. Add 2 tbsp fresh cream. Garnish with crushed kasuri methi. Serve it with roti, naan or paratha.
