 There are many people who enjoy having chicken both at home and in restaurants. There are many ways in which we can cook chicken but Chicken Bhuna Recipe or Chicken Kosha is one of the most delicious recipes among people. For Chicken Bhuna recipe, we need the following ingredients:

Ingredients:

  • 500 gm bone-in chicken pieces
  • 1 tsp ground red chilli powder
  • 1 tsp ground turmeric powder
  • 1 tsp ground cumin powder
  • 1 tsp ground coriander powder
  • 2 tbsp beaten curd
  • 2 tsp ginger-garlic paste
  • Salt to taste
  • 2 tbsp mustard oil
  • 1 bay leaf
  • 2 cardamoms
  • 1 inch cinnamon stick
  • 3 cloves
  • 2 onions (chopped)
  • 2 tomatoes (chopped)

Instructions:

Dry Roasting Spices:

In a hot pan, dry roast the cumin and coriander seeds until they release their aroma. Grind them into a fine powder. This step is crucial for the distinctive bhuna flavour.

Chicken marination:

Firstly, cut bone-in chicken into pieces and wash them well. Then drain the water and put the chicken in a large bowl. Next, marinate the chicken with red chilli powder, turmeric powder, cumin powder, coriander powder and salt. Add ginger-garlic paste to it. Now whisk curd in a bowl and add it to the chicken. Mix them well. Make gashes over the chicken pieces so that the spices are well absorbed. Keep the marinated chicken at least for an hour.

How to cook chicken:

Heat oil in a frying pan. Now add 1 bay leaf, 2 cardamoms, 1 cinnamon stick and 3 cloves. Saute. Next, add the chopped onions and fry till the raw smell of the onion disappears. Then, add the chopped tomatoes and cook till the tomatoes turn soft and mushy. You can also add tomato puree instead of the chopped tomatoes if you want. When the spices start to separate from the oil, add the marinated chicken pieces. Cook for about 4 to 5 minutes and stir. Cover the pan with the lid so that the chicken gets cooked properly. If you think you need to add a little water, you can, otherwise, let the chicken cook in its juices. Taste the gravy and see if any of the spices or the salt needs to be added. Garnish the Chicken Bhuna with crushed kasuri methi or coriander leaves.
