A few days ago, I was not in the mood to cook a full-fledged meal, so I decided to eat something else for lunch. I was contemplating and then thought why not eat some healthy salad that would not only fill my stomach but would also keep my body healthy. Immediately, I was reminded of an Indian Chicken Salad Recipe. I’m sure once you have this delicious salad, you’ll remember the taste forever! 

The ingredients you need to make this scrumptious salad are as follows:

Ingredients:

  • 250 grams chicken breast cut into slices
  • 1 tbsp extra virgin olive oil
  • 1 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala powder 
  • 1/4 tsp of black pepper powder
  • 2 tsp ginger-garlic paste
  • 2 tsp onion paste
  • 2 spoons of lemon juice
  • Salt to taste

How to prepare Salad: 

  • 2 chopped tomatoes
  • 1 sliced avocado
  • A handful of chopped lettuce
  • 2 tbsp of roughly chopped peanuts
  • 1 chopped cucumber
  • 2 boiled eggs chopped into long pieces
  • Salt to taste

Dressing:

  • 2 tbsp of curd
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1/4 tsp black pepper powder
  • Salt to taste

Instructions:

Marinate the chicken pieces with oil, ginger-garlic paste, onion paste, cumin powder, garam masala powder, red chilli powder, turmeric powder, coriander powder, black pepper, lemon juice and salt. Set aside for one to two hours. The longer you keep it marinated, the tastier the chicken will be as it will absorb all the spices and paste properly. In the next step, add extra virgin olive oil in a frying pan and add the marinated chicken pieces. Let it cook for 5 to 6 minutes on each side or until done. Taste and adjust the salt and the spices if required. Once the chicken is cooked, slice into strips and keep it aside.  

Now, let’s make the salad. You need to combine all the salad ingredients in a bowl. Add salt depending on the vegetables. Mix them nicely. Now, add the chicken to this salad and mix properly. 

In another bowl, take curd, olive oil, cumin powder and black pepper powder and mix them. Add salt according to taste. Serve the chicken salad with the dressing.
